If this is really a concern, be sure to avoid any proprietary file formats
and, of course, proprietary systems like MACs ;-)
Non-proprietary formats such as .jpg for pictures and .txt for text will last
the longest. Adobe Acrobat should also be pretty safe. Be sure to include
the necesary viewing software on the CD itself.
