Two books that I would recommend are:
"Making Books that Fly, Fold, Wrap, Hide, Pop-up, Twist & Turn" by Gwen Diehn. Lark Books
"A Book of One's Own" by Paul Johnson. Hodder & Stoughton
These books have great ideas with excellent diagrams suitable especially for elementary children.
