Yeast, Bakers, and Brewers



        This is one of those messages that got lost on the network and was
returned, after spinning around at Duke.  I never quite understand these
twists and turns. I say this to explain why this reply is late.

        This may not be helpful, but....  Many years ago I took a tour of the
Calsberg & Tugorg breweries in Copenhagen, and one of them, I think Tuborg,
claimed that they were the first commercial producers of yeast for the brewing
and baking trades.  Before this time bakers did not buy yeast but saved a sour
dough.  I am sure that if you write to Tuborg, Copenhagen Denmark, their public
relations department, you will get the dates and persons involved.
