Re: yeast and "short biographies"



Re bakers-brewers/yeast connections: if you mean the 18th C., I'd certainly
begin with Diderot/d'Alembert's great Encyclope$die. (Also don't forget the
index because things are tucked away in odd places sometimes.) For guilds,
and interconnections, there is quite a body of material on that sort of thing.
But I couldn't point you in the exact direction for your specific interest.
(Without spending more time on that than I have now.) You might want to try
Beatrice Fink, French Dept., Univ. of Maryland who has written about the
potato (hist. of) and could well be of help to you.
