The National Library of Scotland, in Edinburgh, has as one of its special
collections the Macadam collection on baking and confectionery , but I
don't know how far back it goes. If you go over there you can also study
the national sandwich ingredient, Marmite, (Vegemite in the Antipodes is
a rival) which is made in Burton-on-Trent, a brewing town in England, fro
from left over brewer's yeast. This is obviously not yeast that is made
into bread.
