With reference to our earlier discussion on the ethics and condiments
of emu preparation, our library has just received a large information
packet from the Arizona Ostrich/Emu Association, 2526 N. 87th Way, Scottsdale, A
Arizona, 85257.
The perfect bound packet includes information on the resurgence of ostrich
and emu as commercial crops, recipes for Ostrich Barbecue, Ostrich Stroganoff,
Thick Fluffy Meringue for Pie (using emu egg whites), and Rhodes Secret Sauce,
a summary of the ratite industry in Arizona, future economic projections for
the viability of ratite ranching as an investment, and reprints of Phoenix
area newspaper articles on the subject.
This booklet may be of interest to Arizona, New Mexico and Texas libraries,
especially Special Collections Departments, which collect in the fields of
Range and Cattle Industry, and Economic Development in the West, as well
as general libraries with collecting interests in cooking and ornithology.
