Re: Historic menus

The University of Iowa does, indeed, have significant holdings in
culinary history, but they have few, if any, menus. The great
collection on culinary history formed by the late Louis Szathmary was
divided between the University of Iowa and Johnson and Wales University
in Providence, RI. The U. of I. took the early printed books and
manuscripts and some more recent material. Johnson and Wales University
got most of the recent books and manuscripts (including American
presidential letters and other letters relating to food and cooking in
the White House), prints and posters, menus and postcards. Phil
